Recipe- Homemade Pimento Cheese

Mom and I are huge fans of Pimento Cheese! I have tried my hand at homemade ham salad, and it turned out fantastic. So why not Pimento Cheese?? Why. Not??? And so I did!

What you will need:
  • 2 cups shredded extra-sharp Cheddar cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

  • 1 (4 ounce) jar diced pimento, drained
  • salt and black pepper to taste
Directions:

Place all ingredients in a bowl and mix! I am lazy and use my Kitchen Aid stand mixer!!

Enjoy this delicious LCHF spread!

Where in the world is Jenni? I'm back!

Hi All!

It has been a few weeks since I have posted anything, but I am alive! It has been hard to get back into the swing of things since I've been back from vacation.

That does not mean I have fallen off the LCHF wagon-- opposite in fact.  Let me give you a run down of the last few weeks!

This year for my nice Maddie's spring break, my brother and sister-in-law and I decided to meet down in Cancun, Mexico and vacation there! So Mom, Matt, Shelley, Maddie, and I spent the week of March 19-24 in Mexico soaking up the sun. We had an amazingly wonderful and relaxing time. 

While I was in Mexico, the first few days I was really worried about maintaining my LCHF eating. It was fairly easy with the restaurants on the resort. I had already mentally given myself permission to drink (I'm not a big drinker in general-- but in an all inclusive resort in Mexico? Bring it on).

I was going to try and keep out as many carbs and sugar in my food intake. I did pretty well the first couple of days. But as the week went on, I did allow myself to go off Keto and have some higher carb food-- and my god, the desserts at this place were amazing, so yes... I had some, but only a bite or two shared with someone. I had my mind set that I was going to be okay with a gain of 5-10 lbs. when I got back, because it would all be worth it!

Good news is that I only gained 0.5 lbs! So right away I was back at it- full on Ketogenics. It was a bit rough at first (I did have a period of 'detoxing' where I had headaches, but again, worth it!)

Last week and this week, I was getting back into 'reality mode'. I did not go out and find any new recipes-- I just stuck to some old standards. Got myself back into Ketosis and lost 6 lbs. in the last two weeks.  Yep, I'm back in the game!

I am now down a total of 31 lbs. since 1/9/17 and two sizes. I feel great and love this LCHF life.

Now that I'm back-- I will be on the hunt for some new recipes and will be posting more to my blog.
