For those who are my friends on social media, you will have seen me go on and on about the joys of homemade mayonnaise. Well, I'm going to do it here on my blog as well.
Homemade mayo is so delicious and so much better for you than those filled with preservatives.
I had heard horror stories on how hard it is to make homemade mayo. "Eggs have to be a specific temperature." "Mayo will not emulsify." ... and so on.
Lucky for me and my wondering fingers-- I found the easiest and most delicious homemade recipe for mayonnaise on Pinterest! Based on a request by one of my lovely cousins (Kris), here is how I make my homemade mayo.
What you will need:
* 1 wide mouth Mason jar
* 1 immersion blender
* 1 cup of Oil (I use Grapeseed Oil, it is the lightest tasting oil around-- even better than light taste Olive Oil)
* 1 egg (can be cold right out of the fridge)
* 1/2 Lemon
* Salt to taste
Pour 1 cup of oil in the mason jar
Add your egg
Squeeze in juice of 1/2 of lemon
Salt to taste (I use about 1 tsp and a pinch)
Let egg settle to bottom of jar
Place immersion blender at the bottom of the jar and start blending. Allow the blender to sit on the bottom for a while (you will see the emulsification begin and turning oil and egg into mayo). Slowly raise your blender up and continue until oil is fully blended in. The longer you blend, the thicker the mayo!
Do yourself a favor and make some homemade mayonnaise. It will make your sandwiches and salads, just that much better!
