It is Thursday night. For me, that is my school night. I am going to school to get my Bachelor of Science in Business Management. That means after a long day at work, I sit in class from 6 PM-10 PM and gather some knowledge.
So Thursdays is my loooooonnnnnggg day!
It also means that I don't cook on Thursdays (this makes me sad).
What I use to eat for dinner before class was bad. I would hit up Taco Bell, KFC, or if I was feeling fancy and had time, Thai. All loaded with carbs and just bad stuff (although delicious!).
Since my lifestyle change to low-carb/high fat I have a new routine.
I pick up a Subway Salad. I have them make me a double oven roasted chicken breast salad with, banana peppers, pickles, and black olives. Smother that salad with some oil and vinegar and we have a delicious low-carb meal. Add in a nice snack (who doesn't like pork rinds and cheese) and it's a perfect low-carb night.
